The Best Zucchini Bread EVER!

One of my all time favourite things to eat is zucchini bread! It’s seriously one of the most amazing foods you will ever try. While growing up, I honestly don’t think I ever tried zucchini. Now, I eat zucchini all the time! If you’re looking for a moist, mouth-watering treat, then you need to try this!



I’ve always had a green thumb when it comes to gardening, and this past summer I tried my hand at growing my own zucchini, and surprise! They came out amazing and huge in size. That means so much more zucchini bread! I was given this recipe from a very special person, who I miss dearly. I honestly miss baking in the kitchen with her and barely understanding her french words (I don’t speak French like at all but we tried to learn from each other). Making zucchini bread brings back a lot of great memories.

You will need a few separate bowls in order to start preparing your zucchini bread. There are a few steps as well so read on!

What you will need:

  • 1 Cup Vegetable Oil
  • 2 Cups Sugar
  • 2 Tsp Vanilla
  • 3 Eggs
  • 3 Cups Flour
  • 1 Tsp Baking Soda
  • 1/2 Tsp Salt
  • 2 Tsp Cinnamon
  • 1/2 Tsp Baking Powder
  • 2 Cups Zucchini, Grated
  • 1/2 Cup Chopped Nuts, If desired
  • 1 Cup Chocolate Chips, If desired

Directions:

  • Pre-heat oven to 325 degrees Fahrenheit.
  • Grease 3 loaf pans (I recommend aluminum for the removal of the loaf at the end) with butter or baking spray. Make sure to get all of the cracks!
  • Beat oil and sugar together.
  • Beat together eggs and vanilla.
  • Sift all dry ingredients.
  • Add egg mixture and beat well.
  • Fold in zucchini and dry ingredients. (Add your nuts and chocolate chips here if desired).
  • Bake in the oven for 1 hour.

Once your loafs look ready, take a toothpick and insert them into the center of each loaf. If they come out clean then you know they are ready!

Aluminum pans will come in really handy here! Take a cooling rack and flip your loaf pans upside down right out of the oven, and let sit for a couple of minutes. As long as you did a good job of greasing the pans, all of the loafs will fall out within a matter of minutes and they will cool without having to fight with prying them out!



Finally, the last step is to enjoy! Add a little butter to a warm piece of your newly baked zucchini bread and enjoy! It’s the best zucchini bread EVER!
