Cabbage Rolls: The Lazy Way

Lazy man cabbage rolls is one of the easiest things to make. It literally says how easy it is in the name! You only need several simple ingredients to make a large pan of this that will feed the family plus some!

I’m definitely not opposed to spending time in the kitchen. To be honest, I love make a mess as long as the outcome of that mess is yummy! These lazy man cabbage rolls are just that!

I’ll leave the ingredients first and then explain how I go about making this delicious dish! You’ll have a couple different layers which I will lay out separately for you all.

– 1/2 medium cabbage

Meat Layer

– 1 1/4 lb lean ground beef
– 1/4 cup finely chopped onions
– 1 egg
– 2/3 cup uncooked rice
– 1 tsp salt
– 1/4 tsp pepper
– 1/3 cup water

– 38 oz tomato juice
– 4 tsp lemon juice
– 1 clove of garlic, crushed
– 1/3 cup brown sugar

Now, I reduced the salt a little bit in this recipe as I don’t tend to add much while cooking and prefer to add it to each persons’ taste after it is cooked. I also added half of a large onion instead of measuring out one quarter of a cup, and used a little more pepper in mine.

Start by preheating the oven. I have a convection oven and I preheated it to 350 degrees Fahrenheit.

Start with your sauce ingredients so this can simmer down a little bit while you prep your other ingredients. Add your tomato juice, lemon juice, garlic and brown sugar in a sauce pan and let it simmer about 15 minutes. Mine simmered while I prepped all of the other ingredients.

Next, shred or rough chop your cabbage and lay about half of it in a large oven safe pan for cooking (I use a stone pan). Take your ground beef, onion, egg, rice, salt, pepper and water and mix together lightly. Do not over mix.

Once your meat mixture is ready lay it all out on the first layer of cabbage that you placed in your pan. Add the rest of your cabbage on top of the meat mixture and pour your sauce over the cabbage.

Place aluminum foil over the top of your pan and place in the oven. Cook for 2.5 -3 hours.

Soon enough you’ll be enjoying a wonderfully yummy plate of lazy man cabbage rolls!
