So lately I have been obsessed with going to my local coffee shop on my lunch break to grab a cup of cream of broccoli soup. Let me tell you, it’s uh-mazing! But what isn’t amazing, is the amount of money that I spend on eating out. So in order to change that, I found myself at the grocery store grabbing some of the main ingredients to make a nice big pot of my own soup.
This recipe is super simple. It took me about 5 minute of prep time and about a half hour of cook time.
You will need:
– 1 Onion
– 1/4 cup flour
– 1 box of chicken broth (900mL)
– 1 cup water
– 1/4 cup cream
– 1/4 cup butter
– Salt & Pepper to taste
Now, let me explain these ingredients a little bit further. The amount of broccoli you use is dependent on what’s available at the grocery store, or your personal preference. I bought one bundle of it and I cut about half of the stem off. When I weighed it to see how much I had, it was just under a pound; about 432 grams. I used a whole box of Campbell’s chicken broth. The box is 900ml. I don’t typically use cream, so I just grabbed a 250mL carton of 18% cream from the dairy aisle which worked perfectly! The last thing is butter. Now I used salted butter, therefore did not add any salt at the end of cooking.
1. In a pot, melt your butter over about a medium heat. Once melted, add you diced onions and sauté them until they are transparent in colour.
2. Add 1/4 cup of flour and stir until well combined.
3. Add your chicken broth and one cup of water and stir. Let your mixture come to a boil and simmer for about 5 minutes.
4. Add your diced broccoli and let it cook. I let mine cook about 10 minutes or so.
5. Add your cream and season with pepper & salt.
Voila! Delicious soup!
(After step 4 you can choose to puree your mixture before adding your cream if you would prefer not to have chunks of broccoli. I like mine chunkier, but it’s all about personal choice!)
This soup is super yummy, and to be honest, a lot of mine did not make it out of the pot without me eating it! This is definitely going to be a good way to warm up on those cold winter days coming!

Chicken Broth – $1.88
Cream (250mL) – $1.98
Broccoli – $1.99
The rest of the ingredients I always had, so I would say this could be made for under $8.00! Now compare that to going out and spending that on one bowl! It’s a tie breaker for me!
